This, ladies and gentleman, is a slab of King Ranch Chicken, the National Casserole of Texas. Its unholy constituents are stale corn tortillas, canned cream-of-mushroom soup, Ro-Tel tomatoes, cumin, onions, and forty-seven pounds of cheddar cheese. Despite this, it is delicious.

The King Ranch, in case you never heard of it, is a legendary South Texas fiefdom roughly the size of Ireland. In addition to this fine and homely casserole, the King Ranch’s contributions to western civilization include the Quarter Horse, Santa Gertrudis cattle, the 1946 Triple Crown winner, and the myth of the Texas cattle baron.
